Veg in black bean sauce (vegan)

A good old vegan stir fry is sometimes all you need.  This dish is easy to prepare, tasty and 100% vegan.  The carrots are a great sauce of vitamin A while the cabbage adds some much needed calcium to the days diet.  I have prepared is with mash, but it can easily be served with, rice or even vegan noodles.  Easily customisable.  

Ingredients

  • Carrot
  • Parsnip
  • Cabbage
  • Potato 
  • Chilli pepper
  • Sultanas 
  • 1/2 Onion
  • 1 glove of garlic
  • Black bean sauce 
  • Paprika 

Method 

Cube the potato with the skins still on and boil until soft.   Sherd the cabbage and slice the carrot and parsnip into strips then add to a hot frying pan.  Chop the chilli, garlic and onion and add to the frying pan.  Add the paprika and sultanas.  When the veg is cooked, add the black bean sauce and stir in.  Simmer for 5 minutes on a lower heat then serve with the mash potato. 

Top Tip

To add more roughage, leave the skins on the potato. 

Add some vegan gran chorizo for fun.
