Horseradish Vegetable Zoodles (Vegan)

Prepare yourself for something that little bit different. If you want to lower the carbs in your diet, swapping noodles for spiralized courgette great. The name zoodles is from a combination of the words noodles and zucchini, which is another word for courgette. You will never think about a courgette in the same way again! Yes, zoodles and zoghetti are that good. It is worth noting, the red veg in this dish make it suitable for Pentecost. The eager vegetables are packed in like the people for the festival when Peter preached to them after receiving the Holy Spirit in the upper room with Mary and the others.  100% Vegan.

Ingredients

  • Sweet red pepper (Sliced)
  • Red onion (chopped)
  • Red Chilli (chopped)
  • Carrot (cut into long strips) 
  • 1/4 Yellow bell pepper 
  • 1/2 a small courgette (zucchini)
  • Quorn pieces
  • 1 tsp Paprika
  • Garlic granules
  • 1/2 tsp Garlic paste
  • 1/2 tsp Turmeric
  • 1 Tablespoon Horseradish sauce (Note that not all horseradish sauce is vegan)
  • 2 Cherry tomatoes
  • 2 Olives halved
  • 100 ml Vegetable stock

Apparatus

  • Spiralizer
  • Sharp knife
  • Chopping board
  • Saucepan

Method

Put all the veg excluding the courgette, olives and tomatoes and including the vegan pieces in the saucepan with a teaspoon of olive oil. Lightly fry while adding the garlic granules and other spices. Now make the vegetable stock and add it to the saucepan with the veg in. Add the garlic paste and horseradish sauce. Cover and simmer until the carrot is almost tender. Spiralize the courgette and add it, the tomatoes and olives to the saucepan. Simmer for 3 minutes. Allow to stand for 1 minute before serving.
