Chilli Con Frijoles (Vegan)

Chile Con Frijoles

Chilli Con Frijoles is a vegan Chilli Con Carne.  This simple but tasty meal is delicious and ready in minutes.  I topped mine with a sprinkling of nutritional yeast, which made all the difference.

Time: 15-20 minutes


All recipes are for one person so it is easy for you to plan out.  For instance, if there are 4 of you just multiple all ingredients by 4. 


  • 1/4 cup of basmati rice 
  • 100g of chopped tomatoes
  • 100g of red kidney beans
  • 1/8 cup of black turtle beans
  • 1/8 cup of red split lentils  
  • 2 chopped garlic cloves
  • 1/8 cup of frozen sweetcorn, carrots and peas 
  • 2 Mushrooms
  • 2 cloves of chopped garlic 
  • Black pepper
  • 1 tsp of soya sauce 
  • 1/2 tsp of cayenne pepper  
  • 1/2 tsp of chilli powder
  • 1 tablespoon of salsa
  • 1 tsp of maple syrup


  • Bowl for soaking the beans and lentils 
  • 2 Saucepans
  • Strainer 
  • Wooden spoon


Soak the turtle beans and lentils overnight if you are using dried varieties.  Put everything in one saucepan and heat on a medium heat until the beans are tender.  Boil the rice until tender.  Sprinkle some nutritional yeast on top for flavour and B12.  This is so good!
