Homemade Salsa

This is a quick and tasty dip that is great as an accompaniment too.  You can make it as hot as you like and leave out any ingredients that upset your stomach. I tend to leave out onion and garlic because they can cause the IBS to flair up. Still, with this recipe, I don't miss out.

 

Ingredients

  • Tinned tomatoes x 200 g
  • Tomato paste x 4 tbsp
  • Balsamic vinegar x 1 tbsp
  • Chilli powder x 1/2 tsp
  • Ground cumin x 1/8 tsp
  • Ground paprika x 1/2 tsp
  • Ground black pepper x 1/8 tsp 
  • Jalapeño peppers, pickled x 2 tbsp
  • Lime our lemon juice x 2 tsp

Method

  1. Using a hand blender, blend the tinned tomatoes until smooth in a bowl.
  2. Add the tomato paste, balsamic vinegar, spices, pickled jalapeño peppers, and pepper to a saucepan and add the tinned tomatoes you just blended. 
  3. Heat on a low to medium heat for 10 minutes. Don't let it boil.  Stir regularly. 
  4. Allow to cool and poor into a suitable jar.
