Red Vegan Pesto

A very quick and easy red vegan pesto! This has a wonderful taste and goes great with pasta or even spread on some homemade bread.
Notes
It's OK to swap the almonds for tempeh, just great it and add it at the end and pulse a few times to mix it in.
Serves 2.
Time, 5 mins or less.
Ingredients
- Almonds x 20 g
- Roasted red pepper x 1/2
- Sun-dried tomatoes in oil x 4 or 5
- Green olives x 4 or 5
- Olive oil x 1 tbsp
- Fresh basil x 15 g
Method
- Add all the ingredients except the almonds to a blender and blend for about 30 seconds.
- Add the almonds and keep pulsing until you get the desired texture.
