Rhubarb And Strawberry Crumble
Filled with rhubarb and strawberries and topped with a biscuit crumble. This has got to be one of the best desserts in the world! It's so comforting and easy to make.
Notes
- Self-raising flour is fine if you have nothing else.
- For some extra fun, add a small glass of sherry!
- I used tinned strawberries and rhubarb.
Makes 1 medium-sized dish
Time – 5 minutes to prepare and 35 minutes to bake.
Ingredients
Filling
- Tin of rhubarb x 1
- Tin of strawberries x 1
- Vanilla extract x 1/2 tsp
Crumble
- Plan flour 100 g
- Vegan butter 35 g
- Sugar x 2 tsp
- Salt x 1/4 tsp
- Rolled oats x 3 tbsp
Method
Rhubarb and Strawberry filling
- Drain the rhubarb and strawberries and add to a baking dish.
- Add the vanilla extract and mix.
Crumble
- Tip the flour into a mixing bowl.
- Cut the butter into cubes and add it to the mixing bowl.
- Add the salt.
- Mix together with your hands and rub the butter and flour through your fingers until you get a breadcrumb like look.
- Add the oats and mix them in with your hands.
Crumb will end up looking like breadcrumbs. |
Add the crumble on top of the filling
- With a tablespoon, add the crumble mix to the top of the apple filling and spread it out evenly.
- Bake in a preheated oven on the lower middle shelf at 170 °C for about 35 minutes.
