Butternut Squash And Lentil Soup

This is so easy to make. I like to ave soup once in a while because it is easy tastes great, you can make a big batch and freeze it for latter.
Makes 5 -6 portions.
Time, 60 minutes
Ingredients
- Butternut Squash, diced x 1
- Red lentils x 100 g
- Onion x 1
- Red wine vinegar x 60 ml
- Ginger powder x 1 tbsp
- Paprika powder x 1 tbsp
- Coriander powder x 1 tbsp
Method
- Wash the lentil.
- Ruthy dice the onion and fry in the soup pot in oil.
- Dice the butternut squash and add to the soup pot.
- Add the water, lentils, red wine vinegar, and spices.
- Bring to the boil and the turn down the heat to a simmer. Put the lid on and let simmer for 40 minutes.
- Once soft enough to mash with a wooden spoon, use a hand blender to blend until you get a coarse paste.
