Butternut Squash And Lentil Soup

This is so easy to make. I like to ave soup once in a while because it is easy tastes great, you can make a big batch and freeze it for latter.

 

Makes 5 -6 portions.

Time, 60 minutes

 

Ingredients

  • Butternut Squash, diced x 1
  • Red lentils x 100 g
  • Onion x 1
  • Red wine vinegar x 60 ml
  • Ginger powder x 1 tbsp
  • Paprika powder x 1 tbsp
  • Coriander powder x 1 tbsp

 

Method

  1. Wash the lentil.
  2. Ruthy dice the onion and fry in the soup pot in oil.
  3. Dice the butternut squash and add to the soup pot.
  4. Add the water, lentils, red wine vinegar, and spices.
  5. Bring to the boil and the turn down the heat to a simmer.  Put the lid on and let simmer for 40 minutes.
  6. Once soft enough to mash with a wooden spoon, use a hand blender to blend until you get a coarse paste.
