Vegan Pecan Pie

If you want to make your pecan pie a little more fancy for this Christmas holiday, why not add some bourbon? Yes, adding alcohol to desserts will always make them a little more Christmasy! This vegan pecan pie is great and I think it is perfectly ok to cheat a little and use pre-rolled pastry, just be sure it is vegan.
Notes
- I used pastry from Aldi because it is vegan.
- Check the bourbon is vegan.
Ingredients
- 3 – 4 tbsp bourbon (check it is vegan)
- 24 g of cornflour
- 180 g pitted dates
- 80 g of maple syrup
- 2 tsp vanilla extract
- 25 g of vegan butter
- 250 g raw pecan halves
- 1 pack of vegan pastry. (Check to make sure it is vegan.)
Apparatus
- Pie tin x 20 cm in diameter
- Processor
- small bowl
Method
- Preheat oven to 180ÂșC. Mix cornflour and bourbon together in a small bowl.
- Grease the tin and then line with the pastry.
- Use a fork to poke holes across the bottom of the pie crust.
- Blind-bake the pie crust for 8 minutes then set aside.
- Add the pitted dates, bourbon and cornflour mix, vanilla and maple syrup to the bowl of a food processor and process until mostly smooth, stopping to scrape down the sides as needed.
- Melt the butter and add to the mixture. Process until completely smooth.
- Add about 190 g of the pecans and pulse to chop. Remember, you will need enough nuts to cover the top of the pie.
- Spoon the filling into the prepared pie crust, and decorate the top with the remaining pecan nuts. Bake for 30 to 35 minutes.
