Rum And Raisin White Chocolate Shipwreck

If you are looking for a true piece of decadence, this is it. Plenty of flavour from the rum and raisins and plenty of sweetness from the chocolate and coconut cream. This dessert takes longer to chill than it does to make, so if you are sort of time, this could be for you. All you have to do is soak the raisins overnight and make the dessert in the morning and put it in the fridge. When you get home, the dessert will be more than ready.
Ingredients
- White chocolate, vegan x 30g
- Coconut cream x 2 tbsp
- Golden syrup x 1 tbsp
- Dark rum x 25 ml + 25 ml for soaking the raisins
- Raisins x 3 tbsp
- Banana x 1 medium sided
- 2 walnuts chopped
- a few sliced almonds
- a coup of glazed cherries
Method
- Soak the raisins in 25 ml of rum.
- Melt the coconut cream and white chocolate with the other 25 ml of rum in a bowl over boiling water.
- Add the golden syrup. If you don't, the rum will make it taste bitter.
- Cut the banana into slices and put them in a dessert bowl.
- Add the raisins to the chocolate and coconut mixture. Give it a good stir until it is completely combined.
- Pour the chocolate mixture over the banana.
- Decorate with the chopped nuts and glazed cherries.
- Leave to chill in the fridge for about 2–3 hrs.
