Sage and Garlic Baguettes - No yeast

Written by McDonald, T.   |  Date 23rd of October 2023   This is a simple no yeast bread that goes great with soup or as a lunch box filler.  You can cut it open and fill it with anything you like.  This tasty bread is so easy to make and is finished in under 35 minutes.  Because it doesn't use yeast, it needs no time to proof. 

Vegan Bagels – Low Calorie

So easy and only 143 cals each. Makes 2 bagels Time 30 minutes Ingredients 90 g of fat free vegan yoghurt 40 g of plain flour  30 g of wholemeal flour 1 tsp baking powder A pinch of salt  Sesame seeds (optional) Method  Mix the yoghurt, flour, salt, and baking powder into a dough. Knead until smooth. Knead the dough into donut-like shapes. Top with sesame seeds (optional) Place on a baking tray with a silicon sheet or dust with flour and bake at 180C for 20-25mins. By McDonald, T.   |  Date 31st of July 2023 At first, I thought this was not going to be that good.  How wrong I was!  This is truly great in so many ways.  It tastes great and has a superb texture.  It is great in a sandwich or on a jacket potato as a topping.  Easy and cheap to make; you will not regret making this.

Chocolate Overnight Oats

Vegan Lahmacun

It is vegan much like a pizza, but on flat bread.  Unlike pizza, which has many variations of toppings, lahmacun has one type of topping, which is like bolognaise sauce. Although some people use the oven method, I think that makes it too much like a pizza, so I prefer to stovetop method to keep it a little more different. Notes  You can wrap it up like a burrito or cut it into slices like a pizza. For that little extra, add a couple of teaspoons of vegan red pesto to the sauce.   Makes 1 lahmacun Time 15 – 20 minutes   Ingredients  For base Strong bread flour x 80 g Water x 40 ml Salt x a pinch For sauce Tomato x 1 medium Tomato purée x 1 tbsp Garlic x 1 clove crushed Lemon juice from 1/2 a lemon Cumin powder x a pinch TVP x 20 g Chilli pepper x 1/2 For extra topping A few slices of onion A few pieces of chopped tomatoes Small amount of vegan cheese A chilli pepper Fresh herbs Method Step 1 – Make the dough for the flatb

Written by McDonald, T.   |  Date 22 of May 2023     I loved this cake as a boy, but never got to have it much.  How things have changed!  This cake has a pineapple topping often with cherries.  I love the different textures and sweet tastes this cake has to offer. It is great warm or cold.  You can have it with cream, ice-cream, custard or just on its own.  Ingredients For the topping 5 – 6 pineapple rings, fresh is better. 50 g softened vegan butter 50 g light soft brown sugar 7 glacé cherries For the cake Wet Ingredients 2/3 cup plain vegan yogurt 1/3 cup of vegan milk 1/3 cup rapeseed oil (any vegetable oil will do)  1/3 cup of pineapple juice 1 tbsp of white vinegar 1 tsp vanilla extract Dry Ingredients: 1 and 1/2 cups of self rasing flour 3/4 cup sugar 1 and 3/4 teaspoon baking powder 1/4 teaspoon bicarbonate of soda 1/4 teaspoon salt  Method Mash the light brown sugar and vegan butter together into a paste. Spread this over the bottom and up the sides of the cake tin.

Vegan Chocolate Cake

Written by McDonald, T. | Date 9th of January 2023 My sister and cousin are the cake queens.  Since baking is obviously in the blood and I used to bake with my Nan as a child, I decided to bake a chocolate cake for the work's Christmas do.  As ever, I searched for the best vegan cake recipe, but nothing seemed right.  They either had too much sugar or used solid fats in the cake mix, which I try to avoid, especially if the cake will have butter frosting.  Nonetheless, I came up with this recipe based on others I had found.  Although the first attempts failed by either sinking in the middle or sticking to the tins or just didn't taste right, in the end I succeeded.  This is my vegan chocolate cake with chocolate butter frosting.  

Nan's Bread Pudding - Low Cal

Written by McDonald, T.   |  Date 30th of December 2022 I grew up on this.  It is easy to make, makes the kitchen smell amazing and there is no better comfort than this Victorian pudding!  However, this old fashioned pudding can harbour a huge amount of calories.  With this in mind, I decided to reduce the calories and make it a less frightening bit of fun.   So, since it is the new year and you have been dieting in the lead up to Christmas, why not indulge one last time before you get back on that diet? 

English Cuskynoles

  Written by McDonald, T.   |  Date 16th of December 2022 Jingle bells, jingle bells… Yes, I am in the mood for Christmas and if you are too, this might be just the thing you were looking for!  It is sweet and fun, which is what people want at Christmas.  These little treats are the precursor to the mince pie.  You can serve them to your friends at your Christmas party and impress them with the history of the English Cuskynoles.

Medieval Apple Fritter

Written by McDonald, T.   |  Date 28th of November 2022 With the Christmas season coming up, it is good to have a few treats in your recipe book to keep these little ones happy.  These are filling and great as a snack but best as a dessert.  They are simple and easy to make and once you have made them you can store them in the fridge for latter.  When you want them, heat them up in the oven for a few minutes.  The fritters are fun, sweet, and tasty!

Peach Cobbler

Written by McDonald, T.   |  Updated 26th of March 2024 While chatting away to the usual people on social media, someone announced she was making a peach cobbler, which inspired me.  I looked around for the tastiest looking recipes and could instantly see how easily veganizable this recipe is.  Unfortunately, I couldn't find any fresh peaches anywhere, so I had to use tinned peaches in syrup.  Nonetheless, the recipe turned out splendid, and I highly recommend  this easy to make dessert that goes great with vegan ice-cream or vegan cream.  For your interest, peach cobbler was popular with English settlers in America.

Nan's Bread Pudding

Written by McDonald, T.   |  Date 9th of September 2022 As a boy in the 70s and 80s, I used to love my bike, my pets, my Nan, and my Nan's cooking.  Obviously, I loved my parents and Pop too.  Whenever I was feeling down or if school was getting to be a bit much, my Nan would make the most amazing Bread pudding.  A chunk of the dark brown goodness more than made up for the threat of nuclear war.  It was so sweet and tasty with a crusty sugar coated top layer.  You can serve it with cream, ice-cream, custard or even on its own with sugar sprinkled on top.  Thank you, Elsie!

Roast Lemon Potatoes

Homemade Crumpets

Sun-dried Tomato And Chilli Hummus

Daniel Chilli Hummus

Vegan Lemon Drizzle Cake

Yes, lemon is a happy fruit, so if you need cheering up and you are partial to a piece of cake, this is one that you should try. It is easy to make and tastes fantastic with a lovely light lemon flavour. The sponge is nice and light with a pleasant lemony taste. In addition, the lemon drizzle is made with powdered sugar to excite those taste buds even further. 

Daniel Fast Unleavened Bread
