English Sultana Bread

  Written by McDonald, T.   |  Update 10 of March 2023     This modern English bread is like a combination of Hot cross buns and Italian Raisin Bread.  It has big fat juicy sultanas with a subtle mixed spice flavour of Hot cross Buns and, let's not forget, a wonderful crust.  The bread is light and fluffy.  As it bakes in the oven, it releases a fantastic aroma into the kitchen and beyond.  Once you have made this bread, you can just cut a piece off and have it as a snack with some butter and jam.  Enjoy!

It is also the perfect recipe for Jewish new year, so bookmark this recipe for the New Year!  Whatever your reason, this cake is a delight. 

No Bake Marble Chocolate Squares

This is great as a dessert or a little treat at the weekend and will keep for weeks in the fridge in an airtight container. 

Vegan Soda Bread

Soda bread gets its name from the bicarbonate of soda, which is used instead of yeast. This bread is great on its own, with some jam or just with some butter. St Patrick's Day is on the 17th of March this year (2022).

You can have these at a celebration or just as a personal treat.

Lovely mushroom flavour and great firmness.  As a snack, I love to have this on toast.

  Banana bread with figs and cherries Banana bread with cranberries and nuts Written by McDonald, T.   |  Updated 2nd of April 2023     This recipe is the best I have for banana bread.  It is low in salt and high in taste!  It is very simple to make and easy to eat.  I wanted something that was easy, healthy, and tasty so I looked around for the perfect recipe, but I just couldn't find what I was looking for.  Don't get me wrong, they were all great, but I wanted something vegan and simple so I came up with this.  It is firm but not too chewy and just sweet enough.  When it comes to banana bread, I like it to be more like bread pudding than bread and that is what this recipe gives.  If you like to watch how to make the recipe, a video is provided at the end of the blog.  In addition, it is possible to use different fruits and nuts and you can leave out the apple sauce if you are concerned about packaging. 

Chilli Hummus Home Made

Written by McDonald, T.   |  Date 24th of November 2021      This is a quick and easy recipe that has no added salt or sugar.  I have also tried to keep the waste down to a minimum.  The lemon gives it that fresh taste while the chilli adds a little heat.  This dish is surprisingly creamy and has a smooth texture.  Great for those burritos! Waste 1 tin can  I have added paprika to make it look better but it is not needed for the recipe.  The chilli peppers may or may not come in a plastic bag, so you may have to look around or leave it out.  Obviously, there are options to this recipe, but this keeps it as close to zero waste as possible.  If you leave in and area that seals loose chickpeas then great! Ingredients Lemon x 1 Chickpeas x 1 can Chilli pepper x 1/4 tsp Garlic cloves x 4 Olive oil Method Cook the chickpeas for about 20 minutes.  No need to peel the chickpea just drain and run some cold water over them. Written by McDonald, T.   |  Date 17th of February 2022  Pancake day is almost here, yay!  But now you are a vegan and you want to know how to make vegan pancakes.  Well, it is very straight forward and easy and I have two classic recipes for you depending on if you like your pancakes thin with lemon or fat with fruit.  Before we get started, what is Pancake day and why is it called Shrove Tuesday? Shrove Tuesday This is the day before Ash Wednesday, is in preparation for Lent and the subsequent fasting.  For some this period of fasting will mean simple eating with no meat, fat, sugar, dairy, eggs, or some luxury.  Shrove Tuesday is about repenting of sins before starting lent.  Notably, people would make pancakes as a way to use up any eggs, milk, and sugar that they had in the house before the solemn season of Lent.  However, since we are vegan, we don't have dairy anyway.  Nevertheless, giving up dairy alternatives would be a great thing to do during Lent.  Thin with lemon (En
